Vital Chocolate Fudge
This recipe makes guilt-free fudge that is actually good for you. We have used Chocolate Vital Protein, but you may want to use Plain or Vanilla Vital Protein instead. Add 2-3 tbsp more cocoa powder and 2-3 tbsp honey, if using these alternative powders.
1 cup (250 ml) macadamia nut or almond butter
1⁄2 cup cocoa powder (to taste)
1⁄2 cup Chocolate Vital Protein
1⁄2 cup (125 ml) honey (to taste)
2 tbsp melted coconut oil
1⁄4 tsp sea salt or Himalayan salt
Optional: 1 tsp vanilla extract
1. Mix all ingredients together well.
2. Serve while still soft or refrigerate fudge in a square baking tray lined with baking paper to set until ready to cut and serve.
Note: You can also roll bite size pieces of fudge and refrigerate until set. When ready to serve, roll the fudge bites in cocoa powder, shredded coconut and/or chopped nuts.
Vital Chocolate Mousse with Avocado
This recipe is surprisingly delicious and is packed full of good-for-you fats and protein. All the kids and grownups we’ve shared this mousse with LOVE this healthy alternative!
2 ripe medium size avocados
1⁄4 cup raw unsweetened cocoa powder
1⁄2 cup Chocolate Vital Protein Powder
1⁄2 cup (125 ml) honey or (to taste)
1⁄2 tsp vanilla essence (extract)
Pinch of sea salt (to taste)
1. Cut avocados in half, remove pit and scoop the flesh out into a food processor.
2. Add remaining ingredients and blend until smooth and creamy. You may need to stop the food processor and push the mousse down from the sides with a spatula and continue blending until well mixed.
Note: If using a hand blender, place the avocado flesh in a medium bowl and blend. Carefully add the rest of the ingredients and blend to combine well.
Variation: Substitute 1 cup Chocolate Coconut Butter for raw cocoa and follow the same method. You can also add 1⁄2-1 medium ripe banana or raspberries to this mousse as a slight variation.
